How to Cook
01

Step 1

1. Prepare the Dal Mixture: Drain the soaked chana dal and grind it coarsely in a blender without adding too much water. The mixture should be thick and slightly coarse.

02

Step 2

2. Mix the Spices: In a bowl, mix the ground chana dal with Dry chopped green chilies, cumin seeds, coriander powder, turmeric powder, red chili powder, salt, and DRy chopped coriander leaves.

03

Step 3

3. Shape the Tikkis: Divide the mixture into equal portions and shape them into round, flat tikkis (patties).

04

Step 4

4. Shallow Fry: Heat a few tablespoons of oil in a non-stick pan. Shallow fry the tikkis on medium heat until golden brown and crispy on both sides. Drain on a paper towel to remove excess oil.

05

Step 5

5. Keep Warm: Set the tikkis aside while you prepare the ragda.

06

Step 6

2. Jain Ragda

07

Step 7

1. Cook the Peas: Drain the soaked white peas and pressure cook them with 3 cups of water, salt, and turmeric powder until they are soft and tender (about 3-4 whistles). If you don't have a pressure cooker, you can cook them in a pot with sufficient water until they are soft.

08

Step 8

2. Prepare the Tempering: In a pan, heat oil and add cumin seeds. Let them splutter, then add coriander powder, cumin powder, and chaat masala. Sauté for a few seconds.

09

Step 9

3. Combine with Peas: Add the cooked peas along with their water to the pan. Mix well and let it simmer for about 5-10 minutes until the ragda thickens slightly. Adjust salt and spices to taste.

10

Step 10

3. Assembling the Chana Dal Tikki with Ragda

11

Step 11

1. Plate the Tikkis: Place 2-3 chana dal tikkis on a serving plate.

12

Step 12

2. Add the Ragda: Spoon a generous amount of hot ragda over the tikkis.

13

Step 13

3. Optional Toppings: Add a little tamarind chutney for sweetness or sprinkle some chaat masala and jeera powder. Garnish with sev for extra crunch.
