How to Cook
01

Prepare the Blue Rice

Cook the rice until fluffy and allow it to cool slightly. Mix 3–5 g blue pea flour with 2–3 tbsp water to form a smooth slurry. Heat 1 tsp oil in a wok. Add the blue pea flour slurry and cook briefly. Add the cooked rice and gently toss until evenly coated. Season with salt and a little black pepper. Keep aside.

Tip — Adjust the blue pea flour quantity according to the desired colour intensity.
02

Prepare the Stir-Fried Vegetables

Heat 1 tbsp oil in a wok on high heat. Add capsicum, zucchini, baby corn. Stir-fry until the vegetables are slightly tender but remain crunchy. Add edamame beans. Season with salt and black pepper. Add 1 tsp sesame oil and toss well. Keep aside.

03

Prepare the Jain Yellow Curry Sauce

Heat 1 tsp oil in a saucepan. Add the Jain yellow curry paste and sauté for 1–2 minutes. Pour in the coconut milk and water or vegetable stock. Add soy sauce, sugar, and salt. Simmer gently for 3–4 minutes. Mix cornflour with water to prepare a smooth slurry. Add the slurry gradually while stirring continuously. Cook until the sauce becomes smooth and lightly thick. Finish with lemon juice and keep warm.

04

Prepare the Paneer

Cut paneer into bite-sized pieces. Heat a little oil in a pan. Lightly sear the paneer until golden. Add 2–3 tbsp yellow curry sauce. Toss gently until the paneer is coated. Keep aside

05

Prepare the Crispy Noodles

Boil the eggless noodles according to the package instructions. Drain and allow them to dry slightly. Heat oil in a deep pan or fryer. Fry the noodles until golden and crispy. Drain excess oil and keep aside.

06

Heat the Sizzler Plate

Heat the sizzler plate thoroughly. Place a cabbage leaf on the plate, if desired. Add butter or a little oil to create the sizzling effect. Arrange the blue rice on one side of the plate.

07

Assemble the Japanese Sizzler

Arrange the stir-fried vegetables and edamame beside the blue rice. Place the yellow curry-coated paneer on the plate. Add the crispy noodles. Pour the warm yellow curry sauce over the paneer or serve it in a small sauce bowl. Sprinkle sesame seeds on top. Garnish according to your Jain kitchen protocol.

08

Serve

Serve immediately while the plate is sizzling. Present the blue rice, colourful vegetables, crispy noodles, paneer, and yellow curry sauce in separate sections for an attractive restaurant-style presentation.

Tip — Add the yellow curry sauce just before serving to retain the paneer’s texture and prevent the crispy noodles from becoming soggy.
