Dabeli was born on the streets of Kutch, Gujarat, sometime in the 1960s — a humble bun stuffed with spiced mashed potato, dressed up with sweet-tangy chutneys, crunchy sev, and roasted peanuts, and pressed on a hot griddle until the edges turn golden and slightly crisp. It went on to become one of India's most beloved roadside snacks, equally at home in Mumbai's train stations and Ahmedabad's evening food streets. This version stays true to that spirit while making one thoughtful change: raw (green) banana takes the place of potato. It's a swap that matters in a Jain kitchen, where root vegetables are traditionally avoided out of respect for the countless microorganisms disturbed when a root is pulled from the earth. Raw banana turns out to be a remarkably graceful substitute — starchy, mild, and quick to take on flavor, it mashes into the same soft, spice-laden filling that makes dabeli so satisfying, without missing a beat in texture or heartiness.The magic, as always, lies in the dabeli masala — a warm blend of coriander, cumin, Kashmiri chili, fennel, cinnamon, and clove that's been part of Kutchi kitchens for generations. Combined with amchur's tang and a touch of sugar, it gives the banana filling that signature sweet-spicy-tart character. Butter-toasted pav cradles the filling, and the whole thing is finished with a flourish: sev for crunch, roasted peanuts for bite, pomegranate seeds for a burst of freshness, and a generous swipe of tamarind-date chutney tying it all together. This is street food elevated with intention — nothing lost in flavor, everything gained in mindfulness. It's the kind of dish that proves conscious eating doesn't mean giving up joy; it just means finding new ways to arrive at it.
1.Dry roast coriander seeds, cumin seeds, dried, red chilies,fennel seeds,cinnamon,cloves, and sesame seeds until aromatic. 2.Let them cool and grind into a fine powder. 3.Mix in Sugar,salt, black salt,amchur powder,and 1tsp oil . Set aside. (You can store this masala for future use!)
1. Heat 1 tbsp oil in a pan. 2.Add 1,1/2 tbsp Dabeli Masala and cook for 30 seconds. 3.Add boiled & mashed raw banana (or yam), tamarind chutney,red chilli powder,salt and mix well. 4. Stir in roasted peanuts , pomegrante seeds, coriander and coconut. 5.Cook for 2 minutes, then turn off the heat. (Your Jain Dabeli filling is ready!)
1. Slice the pav in half and spread tamarind chutney on one side and spicy red chutney on the other. 2.Place a generous amount of Dabeli filling inside. 3.Sprinkle masala peanuts , chopped coriander and sev. 4.Close the pav and press ligthly.
