Rasawala Muthiya — a Gujrati Farsan recipe (ready in 30 min, serves 4 Person).
Raswala Muthiya is a traditional Gujarati comfort dish made with cooked rice, shaped into soft muthiya and simmered gently in a flavourful Jain-style gravy.
1. Mix Ingredients: In a mixing bowl, combine whole wheat flour, besan, Cooked rice, grated bottle gourd, green chili paste (if using), turmeric powder, cumin powder, coriander powder, and salt. Mix well. 2. Add Lemon Juice: Add lemon juice to the mixture and knead into a soft dough. If needed, add water little by little to achieve the desired consistency. 3. Add Eno: Just before steaming, add 1 teaspoon of Eno fruit salt to the dough and mix gently. 4. Shape the Muthiya: Divide the dough into small portions and shape each portion into cylindrical rolls (about 1-inch thick).
5. Prepare the Steamer: Grease a steaming plate or a thali and arrange the muthiya rolls on it. 6. Steam: Place the steaming plate in a steamer and steam for about 15-20 minutes or until a toothpick inserted comes out clean. 7. Cool Once done, remove the muthiya from the steamer, allow them to cool slightly.
8. Prepare the Yogurt Mixture: In a bowl, whisk the yogurt with besan, ginger paste (if using), green chili paste (if using), turmeric powder, red chili powder, and salt until smooth. 9. Cook the Gravy: In a pot, add 2 cups of water and bring it to a boil. Gradually add the yogurt mixture, stirring continuously to avoid lumps. Cook on low heat for about 5-7 minutes until the gravy thickens slightly. 10. Add Lemon Juice: Add lemon juice to the gravy and adjust salt and spices according to taste.
11. Combine: Gently add the steamed muthiya pieces to the gravy and simmer for a couple of minutes, allowing them to soak up the flavors. 12. Prepare the Tempering: In a small pan, heat oil. Add mustard seeds and cumin seeds, and let them splutter. Add curry leaves (if using) and fry for a few seconds. 13. Serve: Pour the tempering over the Rasawala Muthiya. Garnish with freshly chopped coriander leaves.
